Ingredients:
- 1/4 teaspoon sugar
- 1 tablespoon active dry yeast
- 1 3/4 cups lukewarm water, divided
- 4 cups all purpose flour
- 2 teaspoons sea salt
- 1/2 cup of molasses
- 4 tablespoons water, combined with the grape molasses
- 2 cups golden sesame seeds
Directions:
1. In a medium bowl, mix sugar with 1 1/2 cups lukewarm water (90-110°F). Sprinkle in the yeast, gently stir, and let it sit for 5 to 8 minutes or until foamy.
2. In a large bowl, combine flour and salt. Create a well in the center, pour in the yeast mixture into the well and stir until the dough forms and becomes less sticky.
3. Transfer the dough to a floured surface and knead for about 5 minutes or until smooth and elastic (poke the dough and it should spring back quickly).
4. Shape the dough into a ball, place it in a lightly oiled bowl, and turn to coat. 5. Cover the dough with plastic wrap or a towel and let it rise in a warm spot in your kitchen for about 45 minutes to 1 hour or until doubled in size.
5. Preheat your oven to 400°F. While you wait for you oven to heat up, line 2 large baking sheets with parchment paper.
6. Transfer the dough to a floured surface and divide the dough into 8 equal sized dough balls. Roll each piece into a 2 foot long rope, stretching gently as you go.
7. Fold each rope in half, twist it into a spiral, and form a ring by joining the ends. Press the ends together to seal and shape the ring. Repeat with all pieces.
8. Mix the molasses with the remaining water and whisk together. Pour sesame seeds onto a plate and place it next to the molasses mixture.
9. Dip each ring into the molasses mixture, coating it completely. Shake off excess, then coat with sesame seeds. Place on the baking sheet and let sit at room temperature for 15 minutes.
10. Bake for 20 minutes, or until deep golden brown. Transfer to a wire rack to cool.
